is there a way to easily check (e.g. an export of properties) the security level for every document, without going through all of them and click on Document -> Security?

Sadly no. There is a ticket on including the Status Tables to include buttons and all properties for each object type. Why security level was deemed "un-interesting" when this was implemented is not documented and hence will have to be left open for speculation....
